Hey Everyone!! I love baking, it’s one of my favorite things to do, for many reasons. The first reason is that it is so calming for me. Being that I am studying full time, also working and running a blog, I find myself really busy during the weeks, so baking on the weekend is just something I can do to relax. The second reason is that I get to bake super yummy treats and eat them!
We are constantly shown many different ways and styles of eating and diets, which can get confusing because does the term ‘healthy’ on food items even mean that anymore?
In today’s recipe, I wanted everyone to relive one of my favorite childhood memories- melting moments! However, in these ones - they are infused with a little lemon essential oil!
- 175g butter (softened)
- ¼ cup raw sugar (or organic icing sugar) *
- 1 tablespoon Young Living Agave Syrup
- 1 cup plain flour
- ¼ cup cornflour
- 60g butter (softened)
- 1 cup raw sugar (or organic icing sugar) *
- 3-4 drops Young Living Lemon Essential Oil
- Piping Bag
TIP: If you have a thermomix, or somewhere you can finely mill sugar, use raw sugar to create your own icing sugar. If not, use organic icing sugar.
Preheat oven to 180º. Line a tray with baking paper. Measure out ingredients.
Put butter, icing sugar and vanilla in a mixing bowl.
Beat with electric beaters (or the beater attachment on a mixer) until the mixture becomes light and fluffy. Add in your Agave Syrup.
Stir in your flour and cornflour.
Open the piping bag, and pour the mixture in.
Pipe rounds of the mixture onto the tray. It depends on what size you want your melting moments to be.
You can then determine how big you want to pipe them.
I say around 3-4cm.
Bake in the oven for approximately 15 minutes, or until cooked through and golden brown.
Once finished cooking, keep on the tray until slightly hardened (otherwise if you try to put them onto your cooling rack because they are still soft, they will just fall apart)
Now transfer to the cooling rack.
Meanwhile, combine the butter, sugar, and lemon essential oil into the mixing bowl, and mix until icing consistency. Place in a piping bag.
Finally, grab two cookie halves, pipe icing onto one half, and then put the other half on top.
And that’s it! You should have plenty of melting moments to enjoy!!
